Irish Soda Bread

Irish Soda Bread

In honor of St. Patrick's Day, my honey and I whipped up this hearty Irish soda bread.  It reminds me of traveling around the craggy coast of Ireland and staying in cozy B&Bs warm with the scent of fresh baked bread. 

Irish Soda Bread Recipe:

Ingredients:
  • All Purpose Flour, 4 cups + 1 tablespoon
  • Sugar, 4 tablespoons
  • Baking Soda, 1 teaspoon
  • Salt, 1 1/2 teaspoons
  • Unsalted Butter, 4 tablespoons, cut into small pieces
  •  Egg, 1 extra-large, lightly beaten
  • Buttermilk, 1 3/4 cups, shaken
  • Orange Zest, 1 teaspoon
  • Dried Currants, 1 cup
Soda Bread:
  • Preheat oven to 375.
  • Bowl 1 (electric mixer bowl): Mix together 4 cups flour, sugar, baking soda, salt and butter.
  • Bowl 2: combine lightly beaten egg, buttermilk and orange zest. Add slowly to Bowl 1.
  • Bowl 3: combine currants and 1 tablespoon flour. Add slowly to Bowl 1.
  • On a well-floured surface, knead the dough several times into a round loaf.
  • Place loaf on a parchment-lined baking sheet and cut an X in the top.
  • Bake for 50 minutes.
  • Serve with a spot of tea!
